Energy bars

Ingredients (for 2 persons)
- 200g dates (pitted)
- 100g oatmeal
- 3 tablespoons honey
- Pinch of salt
  1. Place the dates in a bowl and soak them in hot water for about 10 minutes.

2. Place the soaked dates in a food processor or blender and mix until a smooth paste is formed. Add the honey and a pinch of salt and mix again until everything is well combined.

3. Now add the oatmeal to the date mixture and mix briefly. You want the oatmeal to be well mixed, but the mixture to remain firm.

4. Place a piece of baking paper in a low baking tin or oven dish and spread the mixture evenly over the tin. Press it down well.

5. Then let the mix stiffen in the fridge for at least 1-2 hours.

6. Remove the dish from the fridge and cut the mixture into bars. Store the bars in the fridge or freezer.

These energy bars are ideal for replenishing your carbohydrate stores before or after a workout!

Tip: You can also add nuts, seeds, peanut butter, cacao nibs, coconut flakes or a pinch of cinnamon for extra flavour!
